Severe food allergies are a life threatening condition. Often, even eating something that has been cooked or prepared with cooking implements that have been used with nuts or nut oils can result in a person going into anaphylactic shock. Without something like EpiPen, the adrenalin treatment used when this happens, a person can die, or suffer sever brain damage.
This is what happened to a Sydney woman over 15 years ago, before EpiPen was available in Australia. She and her husband liked Thai food, and apparently liked to eat in Asian restaurants in Newtown. Newtown is a busy suburb in Sydney, Australia, that has a lot of great Thai restaurants, as well as other cuisines. Richelle and her husband thought her peanut allergy was under control, so one night they went to a particular Thai restaurant in Newtown.
They spoke to the waiter, asking him if peanuts or peanut oil was in certain dishes. He went back to the kitchen, was evidently told no, which he relayed to them. They ordered some dishes. She started to feel unwell. The dishes must have had a trace of peanuts, which is no surprise as anyone who has ever eaten Asian food - Thai especially - will know that peanuts are used in many dishes. They are used as garnish. They are a central ingredient in many dishes such as the very common satay sticks that are available as an entree in every single Thai restaurant in Newtown - and I have been to basically every one, as I used to live there. And this couple was no stranger to Thai restaurants in Newton. And presumably when they were 'quizzing' restaurant staff, they noticed the satay sticks on the menu.
Perhaps they've never owned a small business, or worked in restaurants. But I have and I don't recall a separate area, with separate utensils, for cooking allergy-free dishes. It's common sense really - even 'big business', the big business who make chocolate bars, don't have a separate production area for their non-nut flavors. That is why the packets say, 'May contain traces of nuts'.
The restaurant staff did their best. They replied to their questions to the best of their knowledge. But there were still traces of nuts in the meal this lady ate. She left the restaurant feeling unwell, and went into anaphylactic shock. With no EpiPen, she went into a coma. She was saved by hospital staff, but with dreadful injuries that left her needing to be fed by a tube, wheelchair bound, and unable to speak for ten years. She has two daughters who have known their mother this way for most of their lives.
The family sued the restaurant, which is now out of business as a result. They say they did this to cover her medical costs, and they also say that they had "high hopes the celebrated case would wake people up to the potential devastation of food allergy".
Okay - I have some questions.
1. A family goes into a restaurant where peanuts are clearly used in many dishes, and they can see this on the menu, even if they had no idea about Asian food generally. However, this family actually knew about Asian food, by their own admission.
2. They say they went there thinking that, presumably, 'to the best of their knowledge', this lady's peanut allergy was under control. Yet, they now say, they hope this 'makes people wake up' to the devastating effect of food allergies. But, if their own knowledge of food allergies had been better at the time, they would perhaps never have walked into a restaurant that did not have a separate area, separate utensils, for preparing non-allergic food. So, to whom should that need to 'wake up' really apply? Should the responsibility for one's own personal health and safety lie with the individual, or everyone else? Who's choice was in to walk into a restaurant and eat food that could realistically have traces of peanuts in it?
3. A small business was put out of business as a result of an individual family's choices, which, in the wider view, could almost be termed, 'dicing with death'. Where does personal responsibility begin?
I think what happened to this lady and her family, the effects on her children not knowing their mother as she was, is terrible. But I also think it's terrible that the staff at this restaurant also have to live with the memory of what happened, and that the business itself was put out of business by a court case ruling in their (the family's) favor, because of the large compensation payout the family received.
Unfortunately, we live in a world that seems to abdicate personal responsibility on a daily basis. You only have to look at the types of cases that appear before the courts. In Australia, a man had severe neck and spinal injuries after he chose to swim outside the flags at a beach. He dived into a sandbank, injured himself, and successfully sued the local council.
Where does personal responsibility begin?

After thirty years on this planet, I have only just learned of the diveristy of allergic reactions, and only just begun to experience their harsh reality. My learning curver started during my teaching my second semester of high school Math. Until that day, it had been unheard of for me to miss a day, so it's understandable that I was shocked to wake up one morning with an itchy swollen face. As if the overall redness wasn't torture enough, my face was unbearable itchy.
I opted to go to the clinic, where I did not find the sympathy I thought I deserved. When I arrived (minus any form of medical coverage) the clinician seemed uninteresed. The only thing to do, she said, was to try and isolate foods from my diet to find the source of the problem. She informed me o suggest I would be likely to realise these symptoms. She stated that as we get that bit older, we can end up with allergic reactions to foods we've enjoyed all our lives.
The allergic reactions I suffered are really not that severe. All that was needed was a tube of Benadryl cream and a Benadryl capsule (which really tires you, trust me!). However, some allergic reactions can be much more severe, and many will need urgent medical treatment. Some allergic reactions are even deadly, so I'm lucky mine was so mild.
When I was younger I used to wait tables in a fancy restaurant. One of the customers, a friend of one of our more regular diners (a particularly important customer!) asked if there were any seafood used in our cooking process. As it turned out, the stuffing in the meat contained shredded crab, which caused one of the most serious allergic reactions I have ever seen. The man turned purple, and had to be rushed to hospital immediately. The fact that such allergic reactions can alo include the swelling of the tongue is the part that scares me. Imagine that. Your tongue swelling, possibly to the point where your airways are blocked - it could kill you!
My allergy as it turns out was mild allergic reactions to soy milk and soy products in general. I didn't care about what I ate, or how cooked it was - and to think, all because of a little soy bean! Oh, and by the way, the customer turned up the next day completely unharmed after what must have been a horrible experience.
One thing's for sure, alergic reactions are bad news. Whether it's seafood or soy milk, or whether its something completely unrelated, you could find yourself in a tricky position - even if you've had no previous history! But hey, there's nothing you can do about it, apart from seek medical attention if you end up with any unusual ailments.

By allergy the immune system reacts against a substance that it is not supposed to react against, and the reaction is often exaggerated. Objects containing substances that commonly cause allergy are domestic dust, animal hair, household chemicals, chlorine, microorganisms, pollen, nuts, citrus fruits and seafood. THE MECHANISMS OF ALLERGY
The total set of reactions occurring by allergy is very complicated. Many of these are the same as by normal immune reaction, even though they occur when they should not take place. Here are listed some of these reactions:
By exposure to a new substance, cells in the immune system learn to recognize that substance (allergen), and it learns to produce anti-bodies towards the substance, and a certain amount of antibodies is produced. The type of anti-bodies called IgE is the most important by allergic reactions.
IgE will glue itself to some cells in the blood and tissues called mast-cells, and stick out from the surface of these cells. By following exposures to antigens, these will attach themselves to the IgE-ends sticking out from the mast-cells. This will trigger the mast-cells to produce histamine and other signal substances. These signal substances will then spread through the surrounding tissues.
The signal substances will then trigger the walls of small blood vessels to leak fluid into the tissues and accumulate in the tissues. This will cause tissue swelling. They also will cause blood vessels to widen and thus increase the blood stream in the tissues. The consequence of this will be swelling and redness in the affected body parts. The signal substances will also make glands in the tissue produce more mucus, making symptoms like running nose and tight throat.
The new exposures to the antigens will also provoke even more anti-body production. The antibodies will also glue allergens together to bigger complexes. These complexes can clog small blood vessels and in other ways disturb the function of the affected organ.
The allergen-antibody-complexes are then recognized by the cells and other mechanisms that the body uses to collect and eliminate garbage. Eater-cells gather and engulf the complexes.
The immune system also will make enzymes that attack the antigens to break them down. Also this production is stimulated when antigens attach themselves to anti-bodies at cell surfaces. But these enzymes are not entirely specific, and can also to some extend break down components of the body’s own tissue, causing harm and disease symptoms.
WHAT CAUSES THE IMMUNE SYSTEM TO REACT WITH ALLERGY TO A SUBSTANCE
In the beginning of the life of a person, the immune system has the potency to react against most substances in the body itself and the surroundings. However, there are mechanisms that learn the immune system to recognize normal substances found in the daily life in the early childhood, and suppress the reactions against these. If this learning mechanism is disturbed, allergy can develop.
Allergy can also develop if a small child is never exposed to substances that later will be a normal ingredient of his daily life. In this case the immune system will not get the chance to suppress the reaction against this substance. Letting a small child grow up in an exaggerated clean and sterile environment can therefore cause allergies.
On the other hand, certain elements not being a port of a normal environment can cause allergies by repeated and massive exposure. Examples of such substances are chlorine.
TYPES OF ALLERGIES
Allergy varies according to the compound that causes the immunological reaction. An allergic condition also often implies reaction against a combination of several substances. Common substances causing allergy are: Pollen, domestic dust, mites in domestic dust, moulds and mould spores, chlorine, chemicals in soaps and cosmetics, animal hair, seafood, strawberry, fish, parasites, medicines like anaesthetics and antibiotics
An allergic condition may periodically get better or worse according to the concentration of the allergen in the environment. A typical example is pollen allergy with peaks in the pollination season of grass or trees.
